Instructions
In a spacious mixing bowl, combine the rolled oats, almond butter, and honey or maple syrup. Use a spatula or wooden spoon to mix until everything is smoothly integrated.
Next, add in the fresh lemon zest, lemon juice, poppy seeds, and sea salt. If you’re incorporating the shredded coconut and chopped nuts for added flavor and texture, fold them into the mixture at this stage.
Mix all of the ingredients vigorously until you achieve a sticky, cohesive mixture. For ease of mixing, you can use your hands to ensure all components are well combined.
Transfer the mixture to the refrigerator and allow it to chill for approximately 20-30 minutes. This step helps to solidify the mixture, making it easier to shape.
Once chilled, take about 1 tablespoon of the mixture and roll it between your palms to form small balls. Continue this until you’ve formed all the energy balls.
Arrange the rolled energy balls on a baking sheet or plate lined with parchment paper for easy cleanup.
Optional: For an extra touch, roll the formed energy balls in additional poppy seeds or unsweetened shredded coconut, enhancing both texture and visual appeal.
