Instructions
Begin by rinsing the fresh cilantro leaves under cold running water to remove any dirt or impurities. Once rinsed, shake off the excess water and finely chop the leaves to enhance blending.
In a food processor or a high-speed blender, combine the chopped cilantro, Greek yogurt, mayonnaise, freshly squeezed lime juice, minced garlic, and honey. Blend on high until the mixture is completely smooth and well-combined.
Stop the blending process to taste the dressing. Adjust seasoning by adding salt and freshly ground black pepper according to your preference.
If the dressing appears too thick, gradually incorporate water—start with one tablespoon at a time—blending after each addition until you achieve your desired creamy consistency.
After blending and seasoning, pour the dressing into a clean jar or an airtight container. Seal it tightly.
