In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), and pure vanilla extract. Use a spatula to mix the ingredients thoroughly until the mixture is smooth and well blended.
Next, add the ground cinnamon, ground ginger, ground cardamom, ground cloves, and a pinch of fine sea salt. Stir the mixture again to ensure that all the spices are evenly distributed throughout.
Carefully fold in the chopped almonds and unsweetened shredded coconut, making sure they are fully incorporated into the mixture.
Cover the bowl with plastic wrap and refrigerate the mixture for approximately 30 minutes. This chilling step makes the mixture easier to handle when shaping.
After the mixture has chilled, use your hands to scoop out about one tablespoon of the mixture. Roll it into bite-sized balls and place them on a parchment-lined baking sheet. Continue this process until all the mixture is shaped into energy bites.
Once all the bites are formed, transfer them to an airtight container and store in the refrigerator to keep them fresh.
