Instructions
Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
In a mixing bowl, combine rolled oats, shredded coconut, chopped almonds, salt, and ground cinnamon. Stir until evenly mixed.
In a separate bowl, whisk together melted coconut oil, honey (or maple syrup), and vanilla extract until smooth.
Gradually pour the wet mixture over the dry ingredients and stir thoroughly to coat everything evenly.
Transfer the granola mixture onto the prepared baking sheet and spread it out evenly, pressing down lightly.
Bake for 20-25 minutes, stirring halfway through to ensure even toasting. Look for a golden brown color.
Remove from the oven and let it cool completely on the sheet. Fold in dried fruit if desired.
Transfer the cooled granola to an airtight container and store away from light and moisture for up to two weeks.

Serve with fresh fruit and yogurt or milk for a delightful breakfast.
