Instructions
Begin by placing the sliced strawberries into a blender. Add 2 tablespoons of honey or maple syrup along with the lemon juice. Blend the mixture until smooth but retain a few chunks of strawberries for texture, if you like a more rustic feel.
In a separate mixing bowl, thoroughly combine the Greek yogurt with 1 tablespoon of honey or maple syrup and a pinch of salt. Stir until the mixture is smooth and well integrated.
To assemble your popsicles, start layering in your popsicle molds: Pour a few spoonfuls of the vibrant strawberry puree into the bottom of each mold, followed by a layer of the yogurt mixture.
Using a skewer or toothpick, gently swirl the yogurt and strawberry mixtures together to create a beautiful marbled effect, being careful not to overmix.
Continue layering until your molds are filled, making sure to finish with a delightful swirl of the strawberry puree on top for an eye-catching finish.
Insert the popsicle sticks securely into the molds and transfer them to the freezer. Allow the popsicles to freeze for at least 4-6 hours, or until they are completely solid and ready to enjoy.
To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out, and they should come away easily.
