Instructions
In a medium-sized mixing bowl, combine the rolled oats, coconut milk, Greek yogurt, honey (or maple syrup, if using), vanilla extract, and a pinch of salt. Mix well until all ingredients are thoroughly incorporated and the oats are well coated.
Carefully fold in the sliced strawberries, making sure to distribute them evenly throughout the mixture so that every bite contains delightful strawberry flavor.
Divide this delicious oat mixture into two mason jars or airtight containers. As you fill them, gently pack down the mixture to ensure it’s compact and ready to set.
Generously sprinkle the shredded coconut on top of the oats in each jar, adding a delightful textural contrast.
Seal the jars tightly and place them in the refrigerator overnight, or at least for 4 hours, allowing the oats to absorb the creamy coconut milk and soften to perfection.
