Instructions
Begin by preheating your oven to 400°F (200°C).
Prepare the garlic: Cut the top off the bulb of garlic to reveal the individual cloves. Drizzle a small amount of olive oil over the exposed cloves, then wrap the bulb tightly in aluminum foil. Place it in the oven and roast for 30-35 minutes, or until the cloves are soft and have developed a golden color.
While the garlic is roasting, prepare the fresh tomato mixture. In a medium mixing bowl, combine the diced tomatoes, chopped basil, balsamic vinegar, 2 tablespoons of the olive oil, and a generous sprinkle of sea salt and freshly cracked black pepper. Gently mix to combine and let the mixture sit for at least 10 minutes, allowing the flavors to meld.
After the garlic has roasted, remove it from the oven and allow it to cool for a few minutes. Once it’s cool enough to handle, squeeze the soft roasted cloves from their skins into a bowl. Using a fork, mash the garlic until it reaches a smooth and spreadable consistency.
Spread a generous layer of the mashed roasted garlic on each slice of baguette, making sure to coat it evenly.
Arrange the baguette slices on a baking sheet in a single layer. Lightly drizzle the top of each slice with the remaining olive oil. Toast them in the oven for about 5-7 minutes or until they are golden brown and crisp to your liking.
Once the baguette slices are toasted, remove them from the oven and top each slice with a generous spoonful of the marinated tomato mixture, allowing the juices to soak slightly into the bread.
For an extra burst of flavor, sprinkle your choice of grated Parmesan cheese or crumbled feta on top of each bruschetta.
Serve your delicious roasted garlic tomato bruschetta immediately, and enjoy the delightful combination of textures and flavors!
