2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

Juice of 1 fresh lime

Fresh cilantro leaves, for garnish

For the Avocado Green Sauce:

1 ripe avocado

1 cup fresh cilantro leaves (stems removed)

1 jalapeño pepper, seeded and chopped

2 cloves of garlic

Juice of 1 fresh lime

1/4 cup Greek yogurt

Salt, to taste

Water, as needed for desired consistency

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, cumin, smoked paprika, garlic powder, lime juice, salt, and pepper. Add the chicken thighs to the bowl, ensuring each piece is thoroughly coated in the marinade. Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 30 minutes. For a more intense flavor, allow it to marinate for up to 2 hours.

    Prepare the Green Sauce: While the chicken is marinating, make the avocado green sauce. In a food processor, combine the avocado, fresh cilantro, chopped jalapeño, garlic, lime juice, Greek yogurt, and a pinch of salt. Blend until smooth and creamy. If the sauce appears too thick, gradually add water, one tablespoon at a time, blending until you reach your desired consistency. Taste and adjust the salt as necessary.
