Instructions
In a medium-sized mixing bowl or a mason jar, combine the rolled oats, chia seeds, and ground cinnamon. Stir thoroughly to ensure the dry ingredients are well mixed.
In a separate bowl, add the almond milk, creamy peanut butter, honey or maple syrup (if you're opting for sweetness), and a pinch of sea salt. Whisk until the mixture is smooth and all ingredients are fully incorporated.
Pour the wet mixture over the dry ingredients, making sure to cover all the oats. Stir gently but thoroughly until the oats are completely coated with the wet ingredients.
Carefully fold in the sliced banana, distributing the banana pieces throughout the mixture without breaking them too much.
Cover your bowl with plastic wrap or seal the mason jar tightly, then place it in the refrigerator overnight (or for at least 4 hours) to allow the oats to soak up the liquids and soften.
The following morning, remove the oats from the refrigerator and give them a good stir. If the mixture feels too thick for your liking, add a splash of almond milk to reach your desired creaminess.
Serve the prepared oats in individual bowls. Enhance your Peanut Butter Banana Delight with additional banana slices, a sprinkle of chopped nuts, or a handful of coconut flakes on top, if desired.
Notes
