Begin by preheating your oven to 375°F (190°C) to ensure that it is hot and ready for baking.
In a medium mixing bowl, combine the honey, Dijon mustard, olive oil, minced garlic, chopped rosemary, salt, black pepper, and apple cider vinegar. Whisk them together thoroughly until the mixture is smooth and well blended.
Arrange the chicken breasts in a spacious baking dish. Pour half of the honey mustard mixture over the chicken, ensuring each piece is evenly coated for maximum flavor. Reserve the other half of the mixture for later use.
Place the baking dish in the preheated oven and bake the chicken for 20-25 minutes. The chicken is ready when it reaches an internal temperature of 165°F (75°C) and is no longer pink in the center.
Once the chicken is baked, remove it from the oven. Using a brush or a spoon, apply the reserved honey mustard glaze over the top of each chicken breast. Return the dish to the oven for an additional 5 minutes so the glaze can caramelize and develop a delicious sticky texture.
After the additional baking time, take the chicken out of the oven and let it rest for about 5 minutes. This allows the juices to redistribute for a more tender bite.
Before serving, sprinkle freshly chopped parsley over the chicken to add a pop of color and freshness.
