4 tablespoons olive oil, divided

5 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh thyme, finely chopped

Salt and freshly ground black pepper, to taste

Zest of 1 lemon

1 cup orzo pasta

3 cups low-sodium chicken broth

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, finely chopped

Juice of 1 lemon

Marinate the Chicken: In a medium bowl, mix together 2 tablespoons of olive oil, the minced garlic, chopped rosemary, chopped thyme, lemon zest, salt, and freshly ground black pepper. Add the chicken breasts to the bowl, ensuring they are thoroughly coated with the marinade. Cover the bowl with plastic wrap and allow the chicken to marinate for at least 30 minutes at room temperature, or refrigerate for up to 2 hours for a more intense flavor.

    Cook the Chicken: Heat the remaining 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the marinated chicken breasts to the skillet. Cook for approximately 6-7 minutes on each side, or until they are beautifully golden brown and the internal temperature reaches 165°F (75°C). Once cooked, transfer the chicken to a cutting board and let it rest for 5 minutes before slicing.

      Prepare the Orzo: In the same skillet, add the chicken broth and bring it to a rolling boil. Once boiling, stir in the orzo. Lower the heat and let it simmer uncovered for about 10-12 minutes, or until the orzo is al dente and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
