Carefully take a pair of kitchen shears and cut the top shell of each lobster tail lengthwise down the middle, stopping just before the end of the tail.
Gently pull the lobster meat out from the shell, keeping it attached at the base, and lay it on top of the shell.
In a small saucepan, melt the butter over medium heat. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant.
Remove the saucepan from the heat and stir in the fresh lemon juice, chopped parsley, smoked paprika, and season with salt and pepper.
Use a brush to coat the lobster meat with the garlic butter mixture and brush some inside the shell. Reserve a portion for basting.
Arrange the lobster tails on a baking sheet and bake for 12-15 minutes, basting with reserved garlic butter halfway through.
Once cooked, remove the lobster tails from the oven and allow them to rest for a couple of minutes before serving.
Notes
Arrange the lobster tails neatly on a decorative platter. Garnish with extra lemon wedges and a sprinkle of fresh parsley.
