1 cup long-grain white rice

2 cups chicken broth

1 cup Greek yogurt

1 cucumber, finely grated

2 cloves garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika

1 cup cherry tomatoes, halved

¼ cup feta cheese, crumbled (for topping)

Instructions
 

Preheat your oven to 400°F (200°C).

    Take a large baking dish and spread the uncooked long-grain white rice evenly across the bottom, ensuring there are no clumps.

      Position the chicken thighs on top of the rice in a single layer, making sure they do not overlap to ensure even cooking.

        In a medium bowl, whisk together the chicken broth, salt, black pepper, paprika, and oregano until well combined. Pour this flavorful mixture evenly over the chicken and rice in the baking dish.

          In a separate bowl, prepare the tzatziki sauce by combining Greek yogurt, finely grated cucumber, minced garlic, chopped fresh dill, lemon juice, and a pinch of salt and pepper. Stir well until the ingredients are thoroughly mixed and creamy.

            Spoon half of the tzatziki sauce generously over the chicken thighs, ensuring each piece is coated. Reserve the remaining tzatziki sauce for serving after baking.

              Scatter the halved cherry tomatoes around the chicken and rice in the baking dish. The tomatoes will roast beautifully and add a burst of flavor.
