Ingredients

2 lbs boneless, skinless chicken thighs

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 cup corn kernels (choose from fresh, frozen, or canned)

1 medium red bell pepper, diced finely

1 small red onion, diced small

3 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

Juice of 1 fresh lime

Fresh cilantro leaves, chopped, for garnish

Optional: Sliced avocado and sour cream for serving

Instructions

Prepare the Chicken: Rinse the boneless chicken thighs under cold water and gently pat them dry with paper towels. Season both sides generously with salt, freshly ground black pepper, chili powder, ground cumin, and smoked paprika for a flavorful base.

Layer the Ingredients: Place the seasoned chicken thighs flat in the bottom of the crockpot, ensuring they are evenly distributed for thorough cooking.

Add Vegetables: Pour the can of diced tomatoes (including all the juices) directly over the chicken. Then add the drained and rinsed black beans, corn, diced red bell pepper, diced red onion, and minced garlic, allowing the vibrant colors to layer beautifully.

Add Lime Juice: Squeeze the juice from one fresh lime over the entire mixture in the crockpot, which will brighten the flavors. Cover the crockpot with its lid securely.

Cook: Set your crockpot to low heat for 6 to 8 hours or on high for 3 to 4 hours. Keep in mind that cooking times may differ depending on your crockpot model; ensure that the chicken reaches an internal temperature of 165°F (74°C) to confirm it is fully cooked.

Shred the Chicken: Once the cooking time is complete, use two forks to shred the chicken directly in the crockpot, mixing it thoroughly with the other ingredients to combine the flavors harmoniously.

Serve: Using a ladle, spoon the hearty chicken mixture into colorful serving bowls. Optional toppings such as sliced avocado and a dollop of sour cream can be added for creaminess. Finish by garnishing each bowl with a sprinkle of freshly chopped cilantro for a burst of freshness.

                Prep Time: 15 min | Total Time: 6-8 hr | Servings: 6

                  - Presentation Tips: Serve the vibrant chicken mixture in colorful bowls, creating an inviting display. Arrange avocado slices and cilantro attractively on the side for an appealing look. To complete the meal, serve with warm tortillas or over a bed of fluffy rice, enhancing the dining experience!
