Instructions
Start by preheating your oven to 200°F (93°C). Line a baking sheet with parchment paper to prevent sticking.
Rinse the apples thoroughly under cold water, then dry them with a clean towel. Core each apple, then slice them thinly—aim for slices about 1/8 inch thick. A mandoline slicer works best, but a steady hand with a sharp knife will do just fine!
In a large mixing bowl, add the apple slices and drizzle them with lemon juice. Toss gently to ensure all slices are coated; this step helps keep the apples from turning brown.
In a separate small bowl, combine the granulated sugar, ground cinnamon, and a pinch of salt. Stir until well mixed.
Evenly sprinkle the cinnamon sugar mixture over the lemon-coated apple slices. Toss gently yet thoroughly to ensure each slice is generously coated.
Lay the apple slices out in a single layer on the prepared baking sheet, arranging them so they do not overlap. This will help them crisp up beautifully.
Place the baking sheet in the preheated oven and bake for 1.5 to 2 hours. Halfway through, about 45 minutes in, flip the apple slices for even baking. Keep an eye on them towards the end; they should turn crisp and take on a light golden hue.
Once the baking time is complete, remove the apple chips from the oven and let them cool completely on the baking sheet. Remember, they will continue to crisp up as they cool down.
