Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Peel the sweet potatoes and cut them into uniform fries approximately 1/4 inch thick.
In a large mixing bowl, add the sweet potato fries and toss with olive oil until evenly coated.
Sprinkle smoked paprika, garlic powder, cayenne pepper (if desired), cornstarch, sea salt, and black pepper over the fries and toss again.
Transfer the seasoned fries onto the prepared baking sheet in a single layer, ensuring they are not touching.
Bake for 25-30 minutes, flipping halfway through, until golden-brown and crispy.
Remove from the oven and let the fries cool for a few minutes before serving.
