Instructions
Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish with butter or non-stick spray, then line the bottom with parchment paper.
In a large mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, granulated sugar, baking powder, and salt. Mix thoroughly.
In a separate bowl, whisk together the melted butter, egg, vanilla extract, and orange zest until smooth.
Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
Fold in the chopped cranberries and walnuts until evenly distributed.
Transfer the mixture into the prepared baking dish and spread it out evenly.
Bake for 25-30 minutes, or until golden brown. A toothpick inserted should come out clean or with a few moist crumbs.
Let the bars cool in the pan for about 10 minutes, then lift them out using the parchment paper and transfer to a wire rack to cool completely.
Once cooled, cut into squares and serve.
