Instructions
Preheat your oven to 325°F (163°C) and prepare an 8x8 inch baking pan with parchment paper.
In a large mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Press into the bottom of the baking pan.
Bake the crust for 10 minutes and allow it to cool slightly.
In a separate bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and mix until fully blended.
Add the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract and flour until just combined.
Pour the cheesecake filling over the pre-baked crust and spread evenly.
Bake for 30-35 minutes until the edges are set and the center has a slight jiggle.
Cool the cheesecake at room temperature for about an hour, then refrigerate for at least 2 hours.
Mix the granulated sugar and ground cinnamon for the topping. Lift the cheesecake out of the pan using the parchment overhang.
Slice the cheesecake into bars and sprinkle the cinnamon sugar mixture on top. Optionally, drizzle melted chocolate over the bars.
