Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Heat in the microwave, melting in 30-second increments. Stir after each interval until the chocolate is fully melted and smooth. For an additional minty kick, mix in the peppermint extract at this stage.
Dip the Pretzels: Take a pretzel rod by one end and dip it into the melted chocolate, ensuring to cover about two-thirds of the rod. Allow any excess chocolate to drip back into the bowl.
Add the Peppermint: While the chocolate is still wet, generously sprinkle the crushed peppermint candies over the chocolate-covered area of the pretzel.
Set the Pretzels: Carefully place the dipped pretzels on the parchment-lined baking sheet. Continue this process until all pretzel rods are coated.
Chill: Place the baking sheet in the refrigerator and allow the pretzels to chill for about 30 minutes, or until the chocolate has completely set.
