Instructions
Preheat your oven to 375°F (190°C) to ensure it’s ready for baking.
In a medium bowl, add the diced chicken. Sprinkle the Cajun seasoning over the chicken and toss well until every piece is evenly coated.
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Once done, drain the pasta and set it aside.
In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken and cook for approximately 7-8 minutes, stirring occasionally until the chicken is golden brown and cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.
In the same skillet, add the minced garlic and sauté for about 1 minute until it becomes fragrant, being careful not to burn it.
Pour the heavy cream and chicken broth into the skillet with the garlic, stirring constantly. Bring the mixture to a gentle simmer and allow it to cook for 3-4 minutes until it thickens slightly.
Stir in half of the grated Parmesan cheese along with the shredded mozzarella cheese. Mix until the cheeses have melted and the sauce is smooth.
Add the cooked penne pasta, sautéed chicken, and chopped spinach to the cheese sauce. Gently fold the ingredients together until everything is well combined. Season with salt and pepper to taste.
Transfer the chicken and pasta mixture into a greased 9x13 inch baking dish. Sprinkle the remaining Parmesan cheese over the top for a delicious, cheesy crust.
Place the baking dish in the preheated oven and bake for approximately 20-25 minutes, or until the top is golden brown and bubbly.
Once baked, carefully remove the dish from the oven and allow it to cool for a few minutes. If desired, garnish with freshly chopped parsley for an extra touch of color and flavor before serving.
