Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
In a small saucepan over medium heat, combine the balsamic vinegar and honey. Simmer for 5-7 minutes until it thickens slightly, then remove from heat.
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear them for 4-5 minutes on each side until golden-brown.
Transfer the seared chicken breasts to the prepared baking dish. Layer with thick slices of tomato and mozzarella cheese.
Pour the balsamic glaze over the chicken, ensuring it covers the tomatoes and mozzarella.
Bake in the preheated oven for 20-25 minutes until the chicken reaches an internal temperature of 165°F (75°C).
Sprinkle fresh basil leaves on top of the chicken after removing it from the oven.
Allow the chicken to rest for a few minutes before serving, drizzling any leftover balsamic glaze over the portions.
