Instructions
In a spacious mixing bowl, combine the rolled oats, almond butter, finely chopped dried apples, honey or maple syrup, ground cinnamon, pure vanilla extract, and ground flaxseed (only if using).
Stir all the ingredients together until they are thoroughly mixed. If the mixture feels too dry to hold together, add a splash of water or a bit more almond butter, stirring until it achieves a sticky consistency that can form into balls.
Gently fold in the mini chocolate chips or chopped nuts for added flavor and delightful texture, if desired.
Once everything is well combined, use your hands to scoop approximately 1 tablespoon of the mixture. Roll it into a ball and continue until all the mixture is shaped into bites.
Arrange the energy bites on a parchment-lined baking sheet, ensuring they are spaced apart. Place the sheet in the refrigerator for at least 30 minutes, allowing the bites to firm up for easier handling.
After they’ve set, transfer the energy bites into an airtight container for storage. These bites can be kept in the refrigerator for up to a week or frozen for extended freshness.
